Great for holidays!


INGREDIENTS

¼ pound bacon, chopped (turkey bacon works, too)
3 Tablespoons unsalted butter
1 cup diced onion
1 cup diced red and green bell pepper
4 cups corn bread crumbs (Really Great Food Company Cornbread Mix)
1 can cream style corn
4 eggs, lightly beaten
½ teaspoon dried thyme leaves
½ teaspoon dried rubbed sage
Salt and pepper to taste

DIRECTIONS

Preheat oven to 350 degrees
In a large skillet, sauté bacon until cooked, but not crisp. Remove with slotted spoon and drain on paper towels. Pour off bacon fat and melt butter in skillet. Add onions and peppers and sauté until soft.   Transfer onions and peppers to a large mixing bowl and add bacon. Toss with remaining ingredients.  Spoon into a well-buttered 2-quart baking dish. Bake 50-60 minutes, or until well browned and firm to the touch.
