Cranberry Sorghum Scones: Gluten free

Scones and I were never properly introduced. By the time they made it into the American culinary world, I was not able to eat them. However, if I could eat a gluten-filled scone, I imagine it would taste just like this – light and tender to bite but substantial enough to satisfy.

Focaccia with Chestnut Flour
In Italy this recipe is traditionally made with chestnut flour. In fact, chestnut flour is used extensively in Italian baking as it imparts a nutty and slightly sweet flavor that adds richness to pastries and breads. Focaccia is often made with fennel seed or rosemary and chopped or whole pine nuts.

Valentine's Day Chocolate Mousse (Gluten-Free)
Many hard to find baking ingredients can be purchased at The Gluten-Free Mall, also see Gluten-Free Cookbooks.
Ingredients:
8 strawberries (optional)
CHOCOLATE HEARTS (recipe follows, optional)
1/3 cup sugar
3 tablespoons cornstarch
1 cup milk
½ cup water
4 egg yolks, beaten
1 ¾ cups HERSHEY’S Semi-Sweet Chocolate Chips or HERSHEY’S Milk Chocolate Chips
1 teaspoon vanilla extract
¾ cup whipping cream, whipped
½ cup whipping cream, whipped
Directions:
1. Prepare CHOCOLATE HEARTS.
